Food Is Medicine: Nutrition, Aging, and Chronic Disease Prevention
How does the food we eat affect aging and diseases like diabetes and Alzheimer’s disease? What are some simple ways to use the Food Is Medicine approach in daily life? How can healthy eating help protect brain health as we age?
In this Knowledge on Tap conversation, Dr. Yeong S. Rhee will explore these questions and the role nutrition can play in preventing chronic disease and supporting health as we age.
Dr. Rhee is a University Distinguished Professor and Department Head of Health, Nutrition, and Exercise Sciences at North Dakota State University. Over more than 20 years in higher education, she has played a key role in building and strengthening programs in nutrition science, exercise science, athletic training, and sport management while supporting faculty and student success.
Her research centers on preventing chronic diseases through nutrition, with a focus on dietary interventions and the health effects of functional foods and bioactive compounds. Her work focuses on the prevention of chronic conditions such as obesity, diabetes, and cognitive decline, and she has published widely and secured external funding, including collaborations on NIH-supported projects. A Registered Dietitian, she is known for her dedication to teaching, mentoring, and student success. Her work is grounded in a practical approach, connecting research to real-world strategies that help individuals and communities lead healthier lives.
The conversation will be moderated by Dr. Shari R. Veil, Provost and Chief Academic Officer at North Dakota State University. Dr. Veil brings more than two decades of experience in academic leadership, research, and student success to her role at NDSU. An internationally recognized scholar in risk and crisis communication, she has held academic leadership roles at the University of Nebraska, the University of Kentucky, and the University of Oklahoma, and earned her Ph.D. in Communication from North Dakota State University following completion of her MBA and undergraduate degrees at the University of Mary.
